The freezer is the new oven for these shortbread biscuits, which are built up of two gorgeous polar-opposite consistencies.
The biscuit base is a healthy knock-off of your standard shortbreads, being wholesome over refined and – can I add – nicer than any packaged rubbish you’d find in a supermarket.
The chocolate topping is divine and almost ice-cream like when the biscuits are fresh out of the freezer. Not only are these a delicious version of a staple Irish treat, they’re extremely filling.
